My daughter loves to snack! We always joke that her first word was ‘snack’.
I have to admit though that if I am not organised and been shopping recently, her snack choices are limited and not aways that healthy.
One of our go to snack recipes, that are great to batch make and store in the fridge…are these energy balls. I’ve lost count of how many times we’ve made them, and often it’s my daughter who does it all herself.
Picked with goodness, they have fibre, protein and good fats. And they taste great!

Ingredients:
2 cups oat flour*
2 tbsp ground chia or flex seeds (optional)
3/4 cup nut butter (we usually use almond butter)
1/2 cup honey
1/3 cup coconut oil
2 - 4 tbsp water
1 tsp vanilla
1/2 tsp sea salt
1/2 cup Chocolate chips
Instructions:
- On very low heat, melt coconut oil until liquid
- In a large bowl, add all the ingredients and mix well. Add the chocolate chips last.
- Line a baking tray with parchment paper
- Roll the batter into bite sized balls and place on tray. If the batter is too sticky, wet your hands and try again.
- Place the tray in the fridge for 1 hour or overnight. Then store in an air tight container in the fridge for up to 2 weeks.
- These can be frozen too, but ensure you thaw for a 10 minutes before eating.
*To make oat flour, grind some quick oats in your blender, food processer or coffee grinder.
