Grain Free Granola

Super easy and nutritious grain free granola...


Mom, nutritionist, school and kid approved.


High is fiber, protein, good fats and good carbs.


Dry Ingredients:

• 3/4 cup sunflower seeds (raw or soaked and dehydrated)

• 1/2 cup pumpkin seeds (raw or soaked and dehydrated)

• 1/4 ground flax seed (flax meal)

• 2 tbsp ground chia seeds

• 1/2 cup shredded coconut

• 1/2 cup unsweetened banana chips

• 1 tbsp cinnamon powder

• 1 tsp ground ginger

• 1/2 sea salt


Wet Ingredients:

• 1 ripe banana

• 1/3 cup apple sauce

• 1/4 cup coconut oil

• 2 tbsp honey

• 1 tsp vanilla extract


Instructions:

• Preheat oven to 250 degrees

• Grind flax seeds and chia seeds (unless you already have them milled/ground) – I use a coffee grinder

• In a large bowl, mix all dry ingredients together, including roughly chopped banana chips

• Mash up banana with a fork

• In a medium bowl, mix banana and all wet ingredients together well

• Add wet ingredients to dry and mix thoroughly

• Grease bread baking with coconut oil or use parchment paper

• Pour mixture onto baking dish and spread evenly with your hands (do not overcrowding an area)

• Bake for at least 70-80 minutes (if the bigger pieces are still moist, then more time may be needed). Around 30 minutes stir up granola + 60 minutes break big pieces into smaller ones

• Let stand for until cooled

• Eat and enjoy as a snack or with a meal

• Store is air tight container for approximately 1-2 weeks in the fridge
